There should be room to install a wood strip underneath the granite that you would fasten at each end of the wood strip and/or use a glue such as liquid nail to secure to the countertop.
The bit you have listed will basically slowly go through the granite and basically after going through you'll have a little granite core left over in the bit, and a smooth edged 1/2" hole. Should work just fine in a cordless drill, but an electric drill with a little more power might be beneficial in this situation.
